Today we got up and we got ready and weeded. After we weeded for an hour and an half, had done chickens, dishes, and anything else that needed to be done, it was time for lunch. After we had lunch, I filed papers. Then the fun began... we made butter, then chocolate zucchini bread, then zucchini cake. The recipe for chocolate zucchini bread is at my sister Elizabeth's blog. Zucchini Cake
This is also a delicious recipe that uses zucchini. It does have coconut in it which is a family favorite. It is delicious with the icing; it tastes a little plain without it.
Zucchini Cake:
3/4 c. butter
1/4 c. white sugar
3/4 c. brown sugar
1 tsp. vanilla
1+3/4 c. flour
1+1/2 tsp. baking powder
2 c. shredded zucchini
1 c. coconut
1 tsp. ginger
Blend the butter, sugars, and vanilla. Add flour and baking powder. When well blended, add the zucchini and coconut. Place mixture in a 9x9 pan. Bake about 40 minutes at 350 degrees.
Icing:
1 c. powdered sugar
1+1/2 tbsp. milk
2 tbsp. melted butter
1/2 tsp. vanilla
1/2 tsp. cinnamon
Combine all ingredients and spread over squares while still warm. The icing will be pretty runny at first, but it will eventually harden up somewhat.
